A BBQ Pilgrimage to Texas - Prologue

This is a story of a man and his blossoming obsession with BBQ. A man who read an article online, and decided that he wasn't going to let some fancy-pants reporter tell him that a certain dusty town in the central Texas hill country is the best place in the world to enjoy barbecue. No, this man is going there in order to see and taste for himself. And he's dragging along 4 of his friends.

Today I leave for Lockhart, TX. In the next three days I endeavor to drive 965 miles in a rented minivan (1930 total - unlimited mileage, suckers!), eat at two world class Texas bbq joints (three, if I can) and drive home, perhaps with a detour to visit San Antonio and NOLA (or what's left of it). Alas, I may not have time to blog my way through the journey but I will be taking pictures. Expect to hear a lot about this over the next week or so.

The parallels to Alton Brown's Feasting on Asphalt are obvious, and I won't deny that that show is near the front of my brain in this undertaking. Truth is I hatched this hair-brained scheme over one year ago when I read the affore-mentioned article on Slate.com, but the demands of my job and many other commitments kept me from pursuing my dream.

But at long last my BBQ pilgrimage to Texas is underway. All the planning is done, all my Flex Points are hoarded to leave ample room for gorging, and all the bags are packed. See you on the other side...

I don't know how the texan's do it - haven't even dreamed of it - the fat content of the meat scares the living daylight out of me - but best of luck on your journey.
i discovered your blog today while looking for nofat muffins recipes and have just spent a good deal of time reading it - I am simply amazed at your story - wish your points system was the same as ours downunder but can easily convert - thanks

oh yeah if you want a good bbq - you gotta have an Aussie one - a bit less traditional - cheers

I swear I thought of this trip WAY before FOA! And I don't think I deserve "superfan" status until I start rooting through his garbage...

Oh, and I am genetically incapable of growing a beard. Really, it's pathetic.

Being a texan with a huge appetite for BBQ, you are going to a couple great places. However, considering where you are coming from, allow me to offer some friendly tips. Texas BBQ is beef. Yes, they may serve pork there, but We do beef. Brisket, beef ribs, chooped beef, etc... So if you come all the way toe texas for BBQ, be sure to get what we consider to be good BBQ.

Also, don't expect the same type of BBQ sauce. I know y'all often use vinegar in y'all's. Ours range from almost a sweet ketchup (which I don't care for) to a more hickory smoked KC Masterpiece style sometimes sweet, sometimes not. Just because one place's sauce is one way, make no assumption on another establishment's.

In general, in Texas BBQ, smoke is considered one of the more important flavors.

Also, if ya get near Austin after Saturday or later (going out of town till then) make a blog post or drop me an email or something, I'll meet up with y'all and take ya somewhere good here as well.

I'm also a Texas girl and you better be ready for the best BBQ you've ever put in your mouth! Pair it with some baked beans, Texas toast (topped with margarine) and some potato salad and coleslaw. Yummy!
